1lgEgg Yolk, Beaten With

* Unsalted butter should be cold and cut into pieces. ~------------------------------------------------------------------------- In a bowl, stir together flour, sugar, and salt. Add the butter and blend the mixture until it resembles coarse meal. Add the yolk mixture. Toss until liquid is incorporated. Form the dough into a ball. Dust with flour and chill it, wrapped in plastic wrap for 1 hour.
